01. SEEDS

We collect and select healthy seeds from lush trees. Our seeds are resistant to rust and also certified by CENICAFE. Seed varieties include; Tabi and Castillo variety.

02. GERMINATION

Sandbeds, where the coffee seed is planted and selected to germinate (Chapola). Germination occurs under optimal conditions of humidity, and temperature.

03. GARDEN AND NURSERY

This is where the Chapola of coffee is transplanted and also where it remains under controlled conditions of humidity, temperature, and luminosity until the seedlings reach the right size to be transplanted back to final crop again.

04. CROP ESTABLISHMENT

In this stage we work on the land preparation such as cleaning, marking (which establishes the curve line level), hole digging and finally planting seedlings. For this activity, organic fertilizers are used such as composting, bocachi and revitalizing of natural soil.

05. VEGETATIVE STATE

During this time the plant develops vegetative vigor to start the production stage. The vegetative state is from the time of planting to the 18 and 24 months old crop.

06. FLOWERING

The sweet aroma from the flowers will blow you away. The scent engulfs the entire farm and this occurs about 330 days after planting, lasting for a month.

07. HARVEST

The fruit is harvested at maturity, and according to the weather conditions have two harvest periods, for April – May, and October – November.

08. WET MILLING

The pulping machine separates the cherry from the grain and is left in a fermentation period for about 9 hours and then washed.

09. DRY MILLS

Here, the coffee is dried to reach moisture content between 10 and 12% for storage. This process is carried out in a parabolic drying system as marquees or outdoors.

10. STORAGE

11. TRANSFORMATION

This is when the art of roasting takes place. Our roasting master has been doing it for almost for 35 years, and he still says that he is still a novice. Our coffee is transformed under safety conditions and hygiene that guarantees the safety of our product.
